Extraction of essential oils - Garlic Oil

Several Spinning Cone Column systems are in commercial operation to produce extract high quality garlic oil from fresh garlic. To collect garlic oil using the Spinning Cone Column, whole, peeled garlic is milled and mixed with cold water to form a slurry. This slurry is fed into the SCC which, over a very short time, extracts the oil without damage to the distinctive colour or flavour of the oil. Note the pale yellow colouring of the garlic oil.
